But what I am finding now, is many of the insurers are onto this and they’re onto the fire hazard that’s involved with not getting the kitchen canopy cleaned at the appropriate frequency and then making many of their clients clean the canopy and ducting on a six-monthly basis.
Let’s go to common sense now. The frequency is dictated by the volume of work the kitchen has. So I had some venues like the breakfast Creek hotel. We used to do that on a one monthly basis, the Norman hotel, three-monthly because they’re heavy char grill. So if you’ve got a venue that does a lot of steaks, you’ll find your frequency.
Most bakeries and hot bread venues, coffee shops, and cafes are only 12 months as a general rule. Indian and Chinese restaurants by the volume use more oil than most, they’ll want to be cleaned at least six monthly as well, but, well, give me a call, get me to come out and have a look. And what I generally do is. I’m going to ring you in six months and say, How are you going. You will either say it’s dirty come and clean it or come back in six months it’s not looking too bad.
I’m not trying to squeeze money out of the sponge unnecessarily. Business is tough enough without excess costs.
