Here in a duct in Helensvale, on the Gold Coast which is simple but it shows how many companies only clean the areas that they think you will see and leave the rest. If had have been left like this, over years grease would just accumulate and later becomes a fires hazard down the track.
As you see in the picture above and below, the customer will think that the canopy duct has done a good job but upon closer look only the back wall of the kitchen canopy has been cleaned and the rest left.
What happens from here is that the bottoms of those Greasy trays on the left hand side of the above picture fill will residual grease and becomes the fire hazard that can ignite with a splash back from the cooking.
Looking from the outside here is the tell tale sign that the so called professional duct cleaning has been shonky as the grease that pools at the base of the join starts to spill out into the front of the canopy
Many commercial kitchen canopies have layers of ducting high above eye level. To the untrained you would never know it was there. I regularly find many void areas that are just left uncleaned. Not because they cant be reach, more so the contractors just can be bothered.
We simply work our way up cleaning as we go. Or Start on the left hand side and work across. Generally most holes can be breached, fortunately many of my staff are of slight build so can get into many tight areas.
Many owners and in fact many contractors place Duct Cleaning low on their priority list. Sadly this leads to unnecessary costs down the track and down time in the kitchen
